I love finding new and creative ways to put a twist on the same ole' boring veggies. Not that green beans aren't exciting on their own, but why not add a little bacon to the equation? You can't go wrong when adding bacon to anything! I was inspired on Pinterest (again) when creating these little bundles of joy! They are so simple and add a fancy restaurant type feel to any homemade dish.
Green Bean Bacon Bundles
Ingredients
1 pound of fresh green beans (ends trimmed)
8 slices of Turkey Bacon
Sea Salt
Pepper
Olive Oil
Garlic Powder
Preheat your oven to 400 and line a baking pan with foil and cooking spray.
Start by blanching your green beans (place them in a pot of boiling water and cook for approx. 3 minutes - until they are bright green in color - then drain and pour directly into a bowl of ice water to shock them - which stops the beans from cooking).
I partially cooked my bacon ahead of time so that it would get nice and crispy when baking in the oven.
Dry your green beans on a towel and divide into 8 equal bundles. Wrap the bacon on each bundle and place on the baking sheet (bacon seam side down).
Brush on a small amount of olive oil on each bundle then sprinkle with sea salt, cracked pepper, and a dash of garlic powder.
Bake them for 15-20 minutes.
I served mine with chicken and rice, but they would make a perfect side for almost any dish!
